Ingredients

  • 2 eggplants, boiled, drained well, mashed
  • 1 tomato, chopped

  • 3 stalks celery, chopped
  • 1/2 stick margarine
  • 1 bay leaf
  • boiled, seasoned shrimp
  • toasted bread crumbs

Instructions

  1. Combine all ingredients (mashed eggplant, chopped tomato, chopped onion, chopped celery, margarine, bay leaf, seasoned shrimp) in a bowl.
  2. Mix well to incorporate all flavors.
  3. Transfer the mixture into a casserole dish.
  4. Sprinkle toasted bread crumbs on top.
  5. Bake in a preheated oven at 350°F (175°C) for 30 minutes until heated through and golden on top.
