Ingredients

  • 4 cups peeled, diced, and steamed eggplant
  • 1 box Stove Top stuffing mix (both packs)
  • 1 can cream of mushroom soup
  • 1 egg
  • 1/2 cup chopped onions
  • 1/3 cup milk
  • 2 tablespoons butter

Instructions

  1. Mix all ingredients together and put in a baking pan.
  2. Top with Cheddar cheese.
  3. Bake for 20 to 30 minutes at 350°F until bubbly.
