Eggplant Lasagne

Ingredients

  • 1 medium eggplant
  • bread crumbs
  • egg
  • 16 oz. tomato sauce
  • boiled lasagne noodles
  • Mozzarella cheese

Instructions

  1. Peel and thinly slice the eggplant.
  2. Dip each eggplant slice into beaten egg, then coat with bread crumbs.
  3. Pan-fry the breaded eggplant slices until golden brown.
  4. Drain the fried eggplant on paper towels.
  5. Spread a layer of tomato sauce in a baking dish.
  6. Add a layer of lasagne noodles over the sauce.
  7. Spread more tomato sauce over the noodles.
  8. Layer fried eggplant slices over the sauce.
  9. Repeat the layers of tomato sauce, lasagne noodles, tomato sauce, and eggplant until all ingredients are used.
  10. Top the final layer with mozzarella cheese.
  11. Bake at 350°F (175°C) for 30 minutes.
  12. Serve hot with salad and Italian bread.
