Ingredients

  • 1 medium eggplant
  • 10 whole crackers
  • 1 large egg
  • 1/2 tsp. pepper
  • 1/4 cup Bisquick mix

Instructions

  1. Peel the eggplant and cover it with water; boil until tender.
  2. Drain and allow to cool.
  3. Add the egg and pepper to the cooled eggplant and mix well.
  4. Add the Bisquick mix to the mixture.
  5. Drop spoonfuls of the mixture into hot oil and fry until brown.
