Ingredients

  • 3 grated potatoes
  • 1 grated onion
  • 1 grated carrot (optional)
  • 1 egg
  • 3/4 tsp salt
  • 1/8 tsp pepper
  • 2 Tbsp matzo meal or flour
  • 2 Tbsp butter or margarine

Instructions

  1. Grate the potatoes, draining excess water. Grate the onion (and carrot if using), and add to the potatoes.
  2. Mix in the egg, salt, pepper, and matzo meal or flour until well combined.
  3. Pour the mixture into a greased 8-inch or 9-inch square baking pan.
  4. Sprinkle with paprika to aid in browning.
  5. Bake at 375°F for 1 hour or until golden brown on top.
