Ingredients

  • 3 1/2 to 4 cups eggplant, peeled and diced
  • 1 1/2 tablespoons salt
  • 1 onion, sliced thin
  • 1 green pepper, sliced thin
  • 1/2 cup marinara sauce
  • 1 clove garlic, pressed or garlic salt
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme

Instructions

  1. Macerate the eggplant with 1 1/2 tablespoons of salt for about 30 minutes to remove liquid and soften.
  2. Drain the eggplant thoroughly.
  3. Saute the eggplant in a film of olive oil along with the sliced green pepper and onion; do not brown.
  4. Set the sauteed mixture aside.
  5. Dry the eggplant on paper towels and then saute in a film of olive oil for 2 to 4 minutes to brown.
  6. Add the onion, green pepper, marinara sauce, garlic, basil, and thyme to the eggplant.
  7. Cook down the mixture until thickened.
  8. Serve as a vegetable side dish or over cooked pasta.
