Ingredients

  • 2 c. peeled, seeded and diced cucumber
  • 2 c. quartered cherry tomatoes
  • 2 c. romaine lettuce in matchstick pieces
  • 4 oz. feta cheese crumbled
  • 1 c. diced red onion
  • 1 Tbsp. chopped fresh mint
  • 1/3 c. nonfat Italian dressing
  • 6 pita bread split

Instructions

  1. In a medium bowl, combine the diced cucumber, cherry tomatoes, romaine lettuce, crumbled feta cheese, diced red onion, and chopped fresh mint.
  2. Toss well to mix all ingredients evenly.
  3. Add the Italian dressing and toss again to coat the salad mixture.
  4. Let the salad stand at room temperature for 30 minutes or cover and refrigerate overnight.
  5. To serve, spoon approximately 3/4 cup of the salad mixture into each split pita bread.
