Ingredients

  • 1 eggplant
  • 1 cup cauliflower
  • 1 cup white distilled vinegar
  • 1 cup water
  • 2 small hot peppers
  • 2 cloves garlic
  • salt
  • olive oil

Instructions

  1. Peel the eggplant and cut into narrow strips.
  2. Combine water and vinegar in a pot and bring to a boil.
  3. Add the cauliflower and boil for 1 minute, then remove with a spoon to drain.
  4. Add the eggplant to the boiling liquid and cook for 1 minute, then drain.
  5. In a separate container, chop the hot peppers and mince the garlic.
  6. Mix the drained vegetables with chopped hot peppers and garlic, season with salt, and drizzle with olive oil as desired.
