Ingredients

  • 1 eggplant
  • 1/2 lb. ground meat (pork, turkey or beef, lean)
  • 1/2 cup bread crumbs
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 cup green pepper, chopped
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 2 tablespoons chopped garlic
  • 1 (16 oz.) can whole tomatoes, quartered

Instructions

  1. Cut the top off the eggplant without peeling and remove the pulp, leaving a 1/2 inch shell.
  2. Parboil the eggplant shell for 3 minutes to soften.
  3. Combine the chopped pulp with ground meat, bread crumbs, salt, and pepper.
  4. Stuff the eggplant with the meat mixture and secure the top with toothpicks.
  5. Brown green pepper, celery, onion, and garlic in a pan.
  6. Add the quartered tomatoes to the browned vegetables.
  7. Season the mixture and simmer for 15 minutes.
  8. Pour the sauce over and around the stuffed eggplant in a baking dish.
  9. Bake at 350°F (175°C) for 1 hour until cooked through and tender.
