Eggplant Special

Instructions
- Cut eggplant lengthwise; scoop out inside, leaving a 3/4-inch shell.
- Place shells on slightly oiled shallow pan.
- Chop eggplant pulp.
- Cook in butter until clear.
- Add onion and garlic; cool. Add bread crumbs, ground beef and egg; season with salt and pepper.
- Mound eggplant shells with mixture; brush lightly with oil.
- Sprinkle with additional bread crumbs and Parmesan cheese. Bake at 325° for 45 minutes.
- Serve with chili sauce or hot catsup.
- Serves 4.
