Ingredients

  • 1 Tbsp. minced fresh basil
  • 1 Tbsp. minced fresh thyme
  • 1 large clove garlic, minced
  • 1 medium unpeeled eggplant, diced into 1 1/2-inch cubes
  • 2 Tbsp. olive oil

Instructions

  1. Mix all ingredients together in a bowl.
  2. Transfer to a baking dish and bake at 350°F for 30 minutes.
  3. Serve at room temperature and sprinkle with additional fresh herbs.
