  • 2 Tbsp. olive oil
  • 1 clove garlic
  • 2 1/2 c. canned tomatoes
  • 1 c. boiling water
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/8 tsp. oregano
  • 2 tsp. chopped parsley
  • 1 lb. green beans

Instructions

  1. Heat olive oil and chopped garlic in a skillet until garlic is lightly browned.
  2. Add sieved canned tomatoes and boiling water slowly.
  3. Stir in salt, pepper, oregano, and chopped parsley.
  4. Bring to a boil, cover, and simmer for 20 minutes, stirring occasionally.
