A hearty make-ahead breakfast casserole combining eggs, sausage, mushrooms, and cheese, perfect for entertaining or weekend brunch with rich flavors and comforting textures.

Ingredients

  • 24 eggs
  • 1/2 cup milk
  • 1/2 stick butter
  • 1/2 cup sharp shredded cheese
  • 2 lb cooked sausage, ham or bacon, crumbled
  • 2 large cans mushrooms
  • 2 cans mushroom soup
  • 1/2 cup Sherry

Instructions

  1. Scramble eggs with milk and half of the butter.
  2. Saute mushrooms in the remaining butter.
  3. Mix mushroom soup and sherry and heat in a small pan.
  4. Put the scrambled eggs in a 9 x 13 inch baking dish.
  5. Layer the cooked sausage, sautéed mushrooms, and the soup mixture over the eggs.
  6. Sprinkle shredded cheese on top.
  7. Cover with foil and refrigerate overnight.
  8. Bake at 250°F (121°C) for 50 minutes uncovered.
