Ingredients

  • 4 eggs, separated
  • 1/4 cup sugar
  • 1 teaspoon lemon extract
  • 1 tablespoon vegetable oil
  • 1/2 cup sugar
  • 2/3 cup sifted cake flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Powdered sugar
  • Creamy Lemon Filling
  • 1/2 cup flaked coconut
  • 1/4 teaspoon water

Instructions

  1. Beat egg yolks until light and lemon colored; gradually add 1/4 cup sugar, beating constantly.
  2. Stir in lemon extract and vegetable oil; set aside.
  3. Beat egg whites until foamy; gradually add 1/2 cup sugar, beating until stiff, but not dry.
  4. Fold yolk mixture into whites gently.
  5. Combine sifted cake flour, baking powder, and salt.
  6. Fold flour mixture into egg mixture carefully.
  7. Grease a 15 x 10 x 1-inch jellyroll pan and line with waxed paper; grease and flour waxed paper.
  8. Spread batter evenly in the prepared pan.
  9. Bake at 375°F (190°C) for 10 to 12 minutes until cake is golden and springs back when lightly pressed.
  10. Sift powdered sugar onto a linen towel in a 15 x 10-inch rectangle.
  11. When cake is done, immediately loosen from sides of pan and turn out onto the sugar-coated towel.
  12. Peel off waxed paper gently.
  13. Starting at the narrow end, roll up the cake and towel together; cool on a wire rack seam side down.
  14. Unroll the cake carefully; spread with half of the creamy lemon filling and re-roll.
  15. Place on a serving plate, seam side down, and spread remaining filling over all sides.
  16. Combine coconut, water, and food coloring in a plastic bag.
  17. Close securely and shake well to evenly color the coconut.
  18. Sprinkle colored coconut over the cake roll.
  19. Refrigerate for 1 to 2 hours before serving.
