- Dissolve yeast in lukewarm water; set aside until bubbly.
- Sift together flour, salt, and sugar.
- Cut in butter as for pie dough.
- Add egg yolks to yeast mixture and combine with flour and butter mixture.
- Roll dough out thin; cut into squares and place about 3 apple slices in the center of each.
- Sprinkle with cinnamon, sugar, a dab of flour, and dot with butter.
- Fold dough over apples and pinch edges to seal.
- Place in greased pans and let rise for about 35 minutes.
- Bake at 325°F for approximately 25 minutes until lightly browned.
