Embutido
Embutido is a savory Filipino meatloaf with a rich blend of ground pork, sausages, raisins, and hard-boiled eggs, wrapped in leaf lard or foil for flavorful cooking. Perfect for festive gatherings.
Ingredients
- 1 lb. lean pork, ground ⓘ
- 1/2 cup Vienna sausage, chopped ⓘ
- 1 1/2 teaspoons salt
- 1 teaspoon ajinomoto ⓘ
- 2 tablespoons all-purpose flour ⓘ
- 1/4 cup sweet relish ⓘ
- 2 eggs ⓘ
- 1/2 lb. leaf lard ⓘ
- 1 hard-boiled egg, sliced
- 1 piece chorizo de Bilbao or 4 Vienna sausages, cut lengthwise into fourths ⓘ
- 1/4 cup raisins ⓘ
Instructions
- Combine ground pork, chopped Vienna sausage, salt, ajinomoto, all-purpose flour, sweet relish, and eggs; blend thoroughly.
- Spread the pork mixture evenly on an 8 x 10-inch piece of leaf lard.
- Arrange slices of hard-boiled egg, chorizo de Bilbao or Vienna sausage, and raisins on top of the pork mixture.
- Roll up the pork mixture as for a jelly roll.
- Wrap the rolled meat in cheesecloth or aluminum foil.
- Boil in soup stock for 1 hour if wrapped in cheesecloth, or bake in a moderate oven (350°F) for 1 hour if wrapped in aluminum foil.
- Chill the embutido. Before serving, remove wrappings and slice.
