Ingredients

  • 3 oz. lime jello
  • 1 cup boiling water
  • 8 1/4 oz. can crushed pineapple in syrup
  • 2 Tbsp. green creme de menthe
  • 1 cup heavy cream, whipped or Cool Whip

Instructions

  1. Dissolve the lime gelatin in boiling water.
  2. Add crushed pineapple with syrup and green creme de menthe to the gelatin mixture.
  3. Chill until the mixture thickens, stirring often to distribute flavors.
  4. Gently fold in whipped heavy cream or Cool Whip until well combined.
  5. Spoon the mousse into a 1-quart mold.
  6. Chill until the mousse is firm and set before serving.
