Ingredients

  • 1 pint dried marrow or pea beans
  • 4 cups cold water
  • 1 teaspoon dry mustard
  • 1/4 to 1/2 pound salt pork sliced
  • 3 cups lukewarm water
  • 2 onions sliced
  • 1 teaspoon paprika

Instructions

  1. Wash the beans and place them in a large saucepan with lukewarm water; cover.
  2. Let the beans stand for 12 hours.
  3. Do not drain; add enough cold water to cover the beans well.
  4. Slowly bring the mixture to a boil; reduce heat and simmer until tender, about 2 hours.
  5. Transfer the beans and pork to a greased shallow 1 1/2-quart baking dish, covering the pork with beans.
  6. Combine the remaining ingredients and sprinkle over the beans.
  7. Bake uncovered at 300°F until the beans are soft and a brown crust forms on top and along sides, about 3 to 3 1/2 hours.
  8. As the beans dry out, moisten with hot water as needed.
  9. Reheat the beans if necessary before serving.
