- Cover the rind with water in a saucepan and boil for 30 minutes.
- Change the water three times during boiling.
- Drain the rind and cover with sugar, letting it set for a short while.

- Mix dry ingredients (flour, baking powder, salt) and add alternately with milk to the wet mixture.
- Pour the batter into a greased and floured loaf pan.
- Bake at 350°F (175°C) for 45 to 50 minutes.
