Ingredients

  • rind of 2 oranges
  • 1/2 cup sugar
  • 1 egg
  • 2 tablespoons melted butter
  • 2 cups flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt

Instructions

  1. Cut the rind of 2 oranges into small pieces.
  2. Cover the rind with water in a saucepan and boil for 30 minutes.
  3. Change the water three times during boiling.
  4. Drain the rind and cover with sugar, letting it set for a short while.
  5. Add the egg and melted butter to the rind mixture.
  6. Mix dry ingredients (flour, baking powder, salt) and add alternately with milk to the wet mixture.
  7. Pour the batter into a greased and floured loaf pan.
  8. Bake at 350°F (175°C) for 45 to 50 minutes.
