Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 small can green chilies, chopped
  • 1 (12 oz) can enchilada sauce
  • 1 can cream of chicken soup
  • 1 package corn tortillas
  • 1 cup grated cheese

Instructions

  1. Saute chopped onion, ground beef, and chopped green chilies until cooked through.
  2. Add enchilada sauce and cream of chicken soup to the meat mixture and stir well.
  3. Cut corn tortillas into strips and line the bottom of the casserole dish with them.
  4. Layer the meat mixture over the tortillas and sprinkle with grated cheese.
  5. Add another layer of tortillas, then meat mixture, and cheese as desired.
  6. Sprinkle the top with additional cheese.
  7. Bake in a preheated oven at 350°F (175°C) for 20 minutes until bubbly and golden.
