Enchiladas Las Palmas

Ingredients

  • 1 lb. ground beef
  • 1 1/2 c. chopped onion
  • 3 (10 oz.) cans Las Palmas enchilada sauce
  • 8 corn tortillas
  • 1 c. Cheddar cheese (optional)
  • ripe olives for garnish (optional)

Instructions

  1. Saute ground beef and chopped onion in a skillet until cooked. Drain grease.
  2. Mix in 1/3 cup Las Palmas enchilada sauce with the beef and onion.
  3. In a skillet, heat 1 can (10 oz.) of enchilada sauce. Dip each tortilla in the sauce until well coated.
  4. Lay a coated tortilla in a 9 x 13-inch baking dish. Fill with 3 tablespoons of the meat mixture and roll up.
  5. Place the rolled enchiladas seam side down in the dish, side by side.
  6. Cover the rolled enchiladas with the remaining sauce.
  7. Bake at 350°F for 20 minutes.
  8. Optional: Garnish with sliced ripe olives and sprinkle with Cheddar cheese before serving.
