Ingredients

  • 10 oz. frozen chopped spinach, thawed and drained
  • 8 oz. sour cream
  • 2 Tbsp. minced green onion
  • 1 lb. grated Monterey Jack cheese
  • 1 can cream of chicken soup
  • 4 oz. chopped green chilies, drained
  • 12 corn tortillas

Instructions

  1. Blend spinach, cream of chicken soup, sour cream, chopped green chilies, and green onion in a blender until smooth.
  2. Soften the corn tortillas in the microwave for 20 to 40 seconds.
  3. Spoon a tablespoon of grated Monterey Jack cheese and green onion onto each tortilla.
  4. Roll up each tortilla and place them seam-side down in a lightly greased 8 x 12-inch dish.
  5. Once all tortillas are rolled and in the dish, spoon the blended mixture over the top.
  6. Sprinkle the remaining cheese over the enchiladas.
  7. Bake uncovered for 30 minutes.
