Endive Dressing

Ingredients

  • 1 pkg. endive
  • 1 onion, diced
  • 1/4 lb. bacon
  • 3 eggs
  • 1/3 c. sugar
  • 1/3 c. vinegar
  • 2 c. water
  • salt and pepper to taste
  • 1/4 c. cornstarch

Instructions

  1. Cut and clean the endive; cut into bite-size pieces.
  2. Put the endive and diced onion in a bowl.
  3. Cut bacon into small pieces and fry until crisp. Drain on paper towels.
  4. In a saucepan, blend sugar, vinegar, 2 cups water, salt, and pepper. Bring to a boil.
  5. Once boiling, add cornstarch mixed with 1/4 cup water; stir until thickened.
  6. Pour the dressing over the endive mixture and toss to coat.
  7. Serve immediately as a refreshing salad or appetizer.
