Ingredients

  • 8 oz. light cream cheese, softened
  • 1 1/2 tsp. fresh or frozen chives, chopped
  • 1 1/2 tsp. almonds, finely chopped and lightly toasted
  • 1 1/2 tsp. fat-free mayonnaise
  • 2 medium heads Belgian endive
  • 2 Tbsp. red caviar

Instructions

  1. Combine the light cream cheese, chopped chives, chopped toasted almonds, and fat-free mayonnaise; beat at medium speed with an electric mixer until smooth.
  2. Spread the mixture in the middle of each endive leaf and lightly sprinkle with red caviar.
