  • 1 fresh pineapple or 20 oz. can pineapple chunks

  • 2 medium bananas
  • 1 large apple
  • 3 medium beets, cooked, peeled and sliced or 16 oz. can sliced beets, drained
  • 1 jicama, peeled and sliced
  • 1 stick sugar cane, peeled and chopped (optional)

  • 1/2 cup peanuts

Instructions

  1. Remove the crown of the fresh pineapple, peel and remove the eyes, then quarter and remove the core.
  2. Cut the pineapple into chunks or drain canned pineapple chunks.
  3. Peel the oranges and section them over a bowl to catch the juice.
  4. Peel and slice the bananas.
  5. Core and slice the apple.
  6. Toss the apple and bananas with the orange sections and orange juice.
  7. Drain the fruits.
  8. Arrange the pineapple chunks, sliced beets, jicama, and chopped sugar cane on a large lettuce-lined platter.
  9. Sprinkle with peanuts and pomegranate seeds.
  10. Thin mayonnaise or salad dressing with a little milk to achieve drizzling consistency.
