Ester'S Zucchini Bread Loaf

Ingredients

  • 1 c. vegetable oil
  • 1 1/4 c. granulated sugar
  • 1/2 c. brown sugar
  • 2 c. grated unpeeled zucchini
  • 3 eggs, slightly beaten
  • 3 tsp. vanilla
  • 2 c. flour
  • 1/4 tsp. baking powder
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 3 tsp. cinnamon
  • pinch of nutmeg
  • 1 c. chopped nuts
  • 3/4 c. raisins

Instructions

  1. Preheat oven to 350°.
  2. Mix sugars with oil; blend well.
  3. Add eggs and mix.
  4. Add zucchini and mix well.
  5. Add vanilla and sifted dry ingredients; blend well.
  6. Add nuts and raisins.
  7. Pour batter into 2 loaf pans (7 3/8 x 3 5/8 x 2 1/4-inches) greased.
  8. Bake 45 minutes; test with toothpick.
  9. Let set 10 minutes before removing from pans.
