Ingredients

  • 1 cup oil
  • 3 eggs
  • 2 cups sugar
  • 1 teaspoon vanilla
  • 3 cups flour
  • 1 teaspoon cinnamon
  • 1 teaspoon soda
  • 1 teaspoon salt
  • 3 cups diced tart apples
  • 1 cup chopped walnuts (optional)

Instructions

  1. Combine oil, eggs, sugar, and vanilla; set aside.
  2. Sift flour, cinnamon, soda, and salt; add to the oil mixture.
  3. Add diced tart apples and chopped walnuts.
  4. Mix until well combined; batter will be very thick.
  5. Divide the batter evenly into 2 oiled loaf pans.
  6. Bake at 300°F (150°C) for 1 1/2 hours.
  7. Cool for 10 minutes, then remove from pans.
  8. Sprinkle a little sugar on top of the bread while still warm.
  9. Wrap in foil for storage; refrigerate or freeze if desired.
