Ingredients

  • 15 oz. Raisin Bran
  • 3 cups sugar
  • 5 cups flour
  • 1 tablespoon pumpkin pie spice
  • 1 tablespoon cinnamon
  • 2 teaspoons salt
  • 5 teaspoons soda
  • 4 eggs
  • 1 cup shortening
  • 2 tablespoons vanilla

Instructions

  1. Combine bran, sugar, flour, soda, spice, and salt in a very large bowl.
  2. Add eggs, shortening, vanilla, and buttermilk; mix well.
  3. Store in refrigerator in a covered container for up to 6 weeks.
  4. When ready to bake, fill greased muffin tins or paper cups 2/3 full.
  5. Bake at 400°F for 15 to 20 minutes.
