Ingredients

  • 7 medium potatoes, cooked in jackets, peeled, sliced and cubed very small
  • 1/2 cup diced celery or dill pickles
  • 1/2 cup diced green onion
  • 1/2 cup diced red tomatoes
  • 1/2 cup diced red bell pepper or pimento
  • 4 hard-boiled eggs, peeled and mashed with a fork
  • 2 1/4 cups salad dressing
  • 1/2 cup cream-style horseradish
  • 1/4 cup sugar
  • 2 teaspoons salt
  • 1/2 teaspoon pepper

  2. Add remaining ingredients in order: diced celery or dill pickles, diced green onion, diced red tomatoes, diced red bell pepper or pimento, mashed hard-boiled eggs, salad dressing, cream-style horseradish, sugar, salt, and pepper.
  3. Mix gently with your hand to combine all ingredients thoroughly.
  4. Place in a serving bowl and chill for 2 hours before serving.

Tips & Substitutions

To enhance flavor, use freshly chopped herbs like dill or parsley for added freshness. If you prefer a tangy kick, substitute half of the salad dressing with Greek yogurt. You can also replace the hard-boiled eggs with avocado for a creamy texture in vegetarian recipes. Adjust the sugar based on the sweetness of your ingredients, especially if using sweeter tomatoes or bell peppers.

Serving Suggestions

Serve this potato salad chilled as a delightful side dish at barbecues or picnics. It pairs beautifully with grilled meats or can be a light main dish when served with crusty bread. For a complete meal, consider serving it alongside Etta'S Corn Bread or a refreshing English Pea Salad.

Storage & Reheating

Store leftover potato salad in an airtight container in the refrigerator for up to 3 days. If the salad thickens over time, add a bit more salad dressing or a splash of vinegar to loosen it before serving. Avoid freezing, as the texture may change upon thawing.

Frequently Asked Questions

Can I make this potato salad in advance?

Yes, you can make this potato salad a day ahead. Just be sure to store it in the refrigerator, covered tightly. The flavors will meld beautifully overnight, but remember to give it a gentle stir before serving to redistribute the ingredients.

What can I substitute for the salad dressing?

If you want a lighter option, consider using a homemade vinaigrette or a mixture of Greek yogurt and mayonnaise. This will provide a creamy texture while reducing calories. You can also try a ranch dressing for a different flavor profile.

Is there a way to make this salad spicier?

Absolutely! To add some heat, incorporate diced jalapeños or a dash of hot sauce into the salad. You can also mix in a bit of spicy mustard with the dressing to give it a kick that complements the creaminess of the potatoes.
