Instructions

  1. In a food processor, chop the carrots, parsnips, and scallions. Mince the garlic.
  2. Melt butter in a large stock pot and sauté the chopped vegetables and garlic for 5 minutes.
  3. Add chicken broth and quartered potatoes to the pot.
  4. Bring to a boil, then cook, covered, for 10 minutes.
  5. Add the chopped tomatoes, parsley, basil, dried tarragon, ground pepper, and nutmeg.
  6. Cover and cook over medium heat for 15 minutes.
  7. Reduce heat to low and simmer uncovered for 30 minutes.
