Ingredients

  • buttermilk
  • 3 lb. fish
  • 1 slice lemon
  • flour
  • 2 cups pancake mix
  • 2 1/2 cups club soda
  • 1 1/2 pt. oil

Instructions

  1. Soak fish covered with buttermilk and lemon slice in the refrigerator in a covered container for 2 hours to remove fishy taste.
  2. Drain milk from fish; cut fillets into triangles.
  3. Roll the fish fillets in plain flour.
  4. Let the floured fillets dry on toweling.
  5. Combine dry pancake mix with club soda.
  6. Mix to the consistency of buttermilk; dip floured fillets into the batter.
  7. Fry in hot oil for 4 minutes on each side.
  8. Drain on toweling; arrange in one layer on a cookie sheet.
  9. Keep warm in a 250°F oven until all pieces are fried.
