Ingredients

  • 8 medium potatoes
  • 1/2 cup diced onion
  • 1/2 cup diced sweet red pepper
  • 1/2 to 1 cup diced ham
  • 1/4 cup finely sliced green onions
  • 1 container egg substitute or 6 to 8 whole eggs, beaten
  • salt to taste
  • pepper to taste
  • 1/4 teaspoon onion powder

Instructions

  1. Peel and dice the potatoes.
  2. Place vegetable oil in a large nonstick frying pan.
  3. Heat the oil until very hot, but not smoking.
  4. Add the diced potatoes and cook, turning frequently, until done but not too brown.
  5. Add the diced onion and red pepper, and sauté until tender.
  6. Add the diced ham and sauté until warmed through.
  7. Pour in the beaten eggs or egg substitute.
  8. Reduce heat, cover, and cook for 3 to 5 minutes without stirring.
  9. Remove the lid, then turn over the mixture with a spatula, re-cover, and cook for an additional 3 to 5 minutes.
  10. Remove the cover, season with salt and onion powder.
  11. Add sliced green onions and mix well.
