Ingredients

  • 1 cup sifted flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup quick cooking oatmeal
  • 1 cup fresh blueberries
  • 1 cup buttermilk
  • 1/4 cup oil
  • 1/3 cup packed brown sugar
  • 1 egg

Instructions

  1. In a medium bowl, sift together flour, baking powder, baking soda, cinnamon, and salt.
  2. Stir in quick cooking oatmeal. Gently fold in fresh blueberries.
  3. In a small bowl, mix together buttermilk, brown sugar, oil, and beaten egg until blended.
  4. Add the wet ingredients to the dry ingredients and gently stir just until moistened.
  5. Spoon the batter into 12 paper-lined muffin cups.
  6. Sprinkle the tops with granulated sugar.
  7. Bake in a 400°F (200°C) oven for 20 to 25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
