Ingredients

  • 2 Tbsp honey
  • 2 small cloves garlic, minced
  • 1/4 cup soy sauce
  • 1/4 cup white wine
  • 1 Tbsp ginger, freshly grated
  • 3 lb boneless pork loin roast
  • 3/4 cup currant jelly

Instructions

  1. To prepare the marinade, combine soy sauce, white wine, honey, ginger, and minced garlic, and mix well.
  2. Place the pork loin roast in the marinade, cover, and let stand for about 8 hours, turning occasionally.
  3. Remove the roast from the marinade, place on a rack in a shallow baking pan.
  4. Reserve 8 tablespoons of marinade for the glaze, and use the remaining marinade for basting.
  5. Bake at 300°F for about 2 1/2 hours or until done, basting several times.
  6. Meat is ready when a meat thermometer inserted reads 175°F.
  7. Combine the reserved 8 tablespoons of marinade with currant jelly in a small saucepan.
  8. Bring to a boil over medium heat for about 2 minutes, stirring constantly.
  9. Set aside to cool.
  10. After the roast is cooked, spoon the glaze over the meat until completely coated.
  11. Let the roast cool slightly before serving.
