Ingredients

  • 2 Tbsp dry yeast
  • 1/2 cup warm water
  • 3/4 cup sugar
  • 1 cup mashed potatoes

  • 4 to 5 cups unbleached Occident flour

Instructions

  2. In a large mixing bowl, combine the mashed potatoes, sugar, shortening, and scalded milk; stir until well blended.
  3. Add the yeast mixture to the potato-milk mixture and mix thoroughly.
  4. Gradually add the whole wheat bread flour, mixing well after each addition.
  5. Add the eggs, salt, and enough unbleached flour to make a soft dough that is slightly sticky.
  6. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
  7. Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place until doubled in size, about 1 to 1.5 hours.
  8. Preheat the oven to 350°F (175°C).
  9. Punch down the dough and divide it into 12 equal portions.
  10. Shape each portion into a ball and place on a greased baking sheet or in a greased 9-inch round pan.
  11. Cover and let rise again for 30 minutes until puffy.
  12. Bake in the preheated oven for 20 minutes or until golden brown.
  13. Remove from oven and brush with melted butter if desired. Serve warm.
