  • 1/4 c. chopped dry roasted cashews
  • 1/4 c. white vinegar
  • 1/4 c. unsweetened pineapple juice
  • 1 Tbsp. Dijon mustard
  • 1/8 tsp. salt
  • 1/8 tsp. pepper

Instructions

  1. Combine shredded cabbage, shredded red cabbage, shredded carrot, chopped onion, and chopped cashews in a medium bowl; toss gently.
  2. In a separate small bowl, whisk together white vinegar, pineapple juice, Dijon mustard, salt, and pepper.
  3. Pour the dressing over the vegetable mixture and toss to coat evenly.
  4. Cover and chill thoroughly before serving.
