Ingredients

  • 1/2 cup chicken broth
  • 1/2 cup soy sauce
  • 2 cloves garlic, minced
  • 2 teaspoons dried thyme
  • 1 teaspoon ground ginger
  • 1 boneless pork roast, 4 to 5 lbs

Instructions

  1. In a large plastic bag, combine chicken broth, soy sauce, minced garlic, dried thyme, and ground ginger; mix well.
  2. Add the pork roast to the marinade, turning to coat all sides.
  3. Cover and refrigerate for 3 to 4 days, turning several times a day.
  4. Remove the meat from the marinade and discard the marinade.
  5. Place the roast with the fat side down on a rack in a shallow roasting pan.
  6. Bake uncovered at 325°F (163°C) for 2 to 2 1/2 hours.
  7. Let stand covered for 15 minutes before carving.
