Feta Mushrooms
Delightful stuffed mushrooms filled with a flavorful feta and herb mixture, perfect as appetizers for gatherings or elegant bites for any occasion.

Instructions
- Brush the mushrooms clean and remove the stems, reserving them for later.
- Brush the mushroom caps with melted butter and arrange them hollow side up in a baking dish.
- Sprinkle the mushroom caps with salt and pepper.
- Mince the reserved mushroom stems.
- Heat a small frying pan and add 2 tablespoons of butter.
- Add the minced stems and chopped green onions; sauté until the liquid has been absorbed.
- Add flour to the frying pan and mix well.
- Add milk, stirring until the mixture thickens slightly.
- Stir in chopped parsley, crushed garlic, salt, and pepper to taste.
- Add crumbled feta cheese to the mixture and fill the mushroom caps with it.
- Top each mushroom with kasseri cheese and a few dots of butter.
- Bake at 375°F (190°C) for 15 to 20 minutes until the stuffing is browned lightly and the cheese is melted.
