Feta Mushrooms

Delightful stuffed mushrooms filled with a flavorful feta and herb mixture, perfect as appetizers for gatherings or elegant bites for any occasion.

Ingredients

  • 15 large fresh white mushrooms
  • 1/4 cup melted butter
  • salt and freshly ground pepper to taste
  • 2 tablespoons butter
  • 3 tablespoons chopped green onions
  • 1 tablespoon flour
  • 1/4 cup milk
  • 3 tablespoons finely chopped parsley
  • 1 crushed clove garlic
  • 3 tablespoons crumbled feta cheese

Instructions

  1. Brush the mushrooms clean and remove the stems, reserving them for later.
  2. Brush the mushroom caps with melted butter and arrange them hollow side up in a baking dish.
  3. Sprinkle the mushroom caps with salt and pepper.
  4. Mince the reserved mushroom stems.
  5. Heat a small frying pan and add 2 tablespoons of butter.
  6. Add the minced stems and chopped green onions; sauté until the liquid has been absorbed.
  7. Add flour to the frying pan and mix well.
  8. Add milk, stirring until the mixture thickens slightly.
  9. Stir in chopped parsley, crushed garlic, salt, and pepper to taste.
  10. Add crumbled feta cheese to the mixture and fill the mushroom caps with it.
  11. Top each mushroom with kasseri cheese and a few dots of butter.
  12. Bake at 375°F (190°C) for 15 to 20 minutes until the stuffing is browned lightly and the cheese is melted.
