Ingredients

  • 10 oz. frozen spinach
  • 3 Tbsp. olive oil
  • 1 medium onion
  • 16 oz. Ricotta cheese
  • 1 lb. fettuccine
  • 1 1/2 tsp. salt
  • 1 1/2 cups milk
  • grated Parmesan cheese

Instructions

  1. Cook fettuccine in boiling water until al dente.
  2. Drain and keep warm.
  3. Place frozen spinach in boiling water for 3 minutes, then drain well and squeeze dry.
  4. Heat olive oil in a frying pan over medium heat and add sliced onion; sauté until translucent.
  5. Add spinach to the pan and cook, stirring frequently.
  6. Add the cooked spinach mixture to the drained fettuccine.
  7. Stir in ricotta cheese, milk, salt, and pepper.
  8. Cook over low heat, stirring lightly until well mixed and heated through.
  9. Transfer to a serving bowl and sprinkle with grated Parmesan cheese.
