Ingredients

  • 2 Tbsp butter
  • 3 cloves garlic, minced
  • 6 scallions, chopped diagonally
  • 2 Tbsp flour
  • 1/4 cup egg substitute
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 to 1 1/2 cups skim or 2% milk
  • 1 (12 oz) box whole wheat fettuccine
  • 3 oz Swiss cheese, grated
  • chopped parsley
  • sage (optional)

Instructions

  1. Prepare pasta according to package directions; drain.
  2. Melt butter or margarine in a saucepan over medium heat.
  3. Add minced garlic and chopped scallions to the pan.
  4. Stir in flour and cook until a paste forms, then add egg substitute and milk, stirring constantly.
  5. Cook, stirring, until the mixture thickens slightly.
  6. Toss the sauce with the cooked pasta in a large bowl.
  7. Stir in grated Swiss cheese, salt, and pepper.
  8. Garnish with chopped parsley and optional sage before serving.
