Ingredients

  • 1/4 cup butter
  • 1/4 cup olive oil
  • 1 cup dry white wine
  • 5 to 6 large garlic cloves, minced
  • 1 teaspoon crushed rosemary
  • 1 pinch oregano
  • 2 cans (28 oz.) drained Italian tomatoes, chopped
  • 1 large onion, chopped
  • 3 cups various shellfish meat
  • 1/2 cup minced parsley
  • 1/2 teaspoon sugar
  • salt and pepper to taste

Instructions

  1. Put butter and oil in a skillet over medium heat until melted and bubbling.
  2. Add wine, garlic, rosemary, oregano, and chopped onion.
  3. Cook, stirring until wine evaporates and butter turns golden.
  4. Reduce heat and add chopped tomatoes.
  5. Cook until heated through, about 2 to 3 minutes.
  6. Add shellfish, parsley, sugar, salt, and pepper.
  7. Stir until shellfish is heated through and serve over hot cooked pasta.
