Ingredients

  • 6 Spanish onions
  • 1/2 cup water
  • 1/2 cup vinegar
  • 3/4 cup white sugar
  • 2 teaspoons salt
  • 1 1/2 cups mayonnaise
  • 3 teaspoons celery seed

Instructions

  1. Slice the Spanish onions and soak them in brine made of water, vinegar, sugar, and salt for 3 hours, stirring often.
  2. Drain the onions thoroughly after soaking.
  3. Combine the soaked onions with mayonnaise, celery seed, salt, and pepper in a bowl.
  4. Mix well and serve as a salad or side dish.
  5. Store leftovers in an airtight container; the dish keeps well.
