Ingredients

  • 1 1/2 cups sugar
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 cup butter
  • 2 1/3 cups flour
  • 1 cup plus 3 tablespoons potato starch

Instructions

  1. Cream butter and sugar together until light and fluffy.
  2. Add eggs one at a time, beating well after each addition.
  3. Incorporate flour, potato starch, and baking powder into the mixture.
  4. Divide the dough into two equal parts and shape each into a roll.
  5. Place the rolls side by side on a cookie sheet.
  6. Make a slight indentation down the middle of each roll.
  7. Fill the indentations with fig jam or your preferred jam.
  8. Bake at 350°F (175°C) until the edges are slightly golden, about 15 minutes.
  9. While warm, cut the rolls into slices about one finger wide on a slant.
  10. Let the cookies cool completely and store in a dry, airtight container.
