Ingredients

  • 2 Tbsp. powdered coriander
  • 1 heaping tsp. garam masala
  • 1 tsp. turmeric
  • 1/2 to 1 tsp. chili powder
  • salt to taste

Instructions

  1. Heat oil in a saucepan.
  2. Add mustard and cumin seeds; let them pop.
  3. Fry onion until golden brown.
  4. Add powdered coriander, garam masala, turmeric, chili powder, and salt; stir constantly to fry the spices.
  5. Add garlic and ginger; fry for a few more minutes, adding water if mixture becomes too dry.
  6. Add meat; stir and cook at medium heat until partly cooked.
  7. For lamb, add potatoes when partly cooked; for chicken, add potatoes after about 5 minutes.
  8. Cook the meat in its own juices, adding water as needed.
  9. Simmer until meat is tender.
  10. Add tomato paste and cook for another 5 to 10 minutes.
  11. Optional: add chopped cilantro before serving.
  12. Serve with boiled or steamed white rice.
