Green Mango Chutney
Tangy, spicy green mango chutney combines tart unripe mangoes with ginger, chili peppers, and aromatic spices, making it perfect for pairing with grilled meats or cheeses.
Ingredients
- 12 medium green unripe mangos, diced ⓘ
- 3 cups golden raisins ⓘ
- 1 cup dark rum
- 6 cups brown sugar ⓘ
- 4 cups apple cider vinegar ⓘ
- 2 medium onions, diced ⓘ
- 1/2 cup grated ginger ⓘ
- 2 teaspoons salt ⓘ
- zest of 3 limes ⓘ
- 5 cloves minced garlic ⓘ
- 8 Hawaiian chili peppers, seeded and diced
- 2 teaspoons allspice ⓘ
Instructions
- Sprinkle 2 teaspoons salt over diced mangos and let sit.
- Add raisins to 1 cup dark rum and soak until rum is absorbed.
- Combine vinegar and brown sugar and bring to a boil for 5 minutes.
- Add mangos and cook over low heat until tender.
- Add all other ingredients and simmer on high for 30 minutes.
- Reduce heat to low and simmer for 1 hour.
- Place in sterilized jars and seal.
