Ingredients

  • 12 cooked potatoes, mashed
  • 1 cup dry instant potatoes
  • 1/2 pound unsifted flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/4 pound butter
  • 1 tablespoon grated onion
  • 4 beaten eggs
  • toasted croutons

Instructions

  1. Combine the dry ingredients—instant potatoes, flour, baking powder, and salt—and mix lightly.
  2. Add creamed butter and grated onion to the dry mixture and mix well.
  3. Stir in the beaten eggs until the mixture forms a dough.
  4. Using an ice cream scoop, form the mixture into balls around 4 or 5 small toasted croutons.
  5. Place the formed dumplings onto a floured pan.
  6. Bring water or broth to a boil in a large pot.
  7. Drop the dumplings into boiling water or broth and cook for about 10 minutes, or until they float.
  8. Remove the dumplings and serve topped with browned butter and cracker crumbs.
