  • 4 fillets of sole
  • 2 packages (10 oz. each) frozen chopped spinach

  • 1 tsp. salt
  • dash of white pepper
  • dash of grated mace
  • 1 1/2 tsp. seasoned salt
  • 1 1/2 Tbsp. chopped parsley
  • 2 Tbsp. butter
  • 2 1/2 Tbsp. flour
  • 2/3 cup half and half

  2. Mix the spinach with onion powder, 1/2 teaspoon of salt, white pepper, and grated mace.
  3. Turn the spinach mixture into a shallow 5-cup baking dish.
  4. Sprinkle the sole fillets with seasoned salt and chopped parsley.
  5. Roll up the fillets and place them on top of the spinach in the baking dish.
  6. Melt butter in a skillet and blend in flour.
  7. Stir in half and half and cook, stirring, until the sauce begins to thicken.
  8. Add wine and remaining salt to the sauce.
  9. Cook until the sauce boils thoroughly.
