Fire Roasted Hot Salsa

A smoky, spicy fire-roasted salsa with charred tomatoes and jalapenos, perfect for dipping or topping, offering bold flavors suited for parties or casual gatherings.

Ingredients

  • 6 medium tomatoes
  • 10 jalapeno peppers (red preferred)
  • 1/4 medium Spanish onion
  • 2 cloves garlic, chopped
  • 2 Tbsp. chopped fresh cilantro
  • 2 Tbsp. white vinegar
  • 2 tsp. salt
  • 1 1/2 tsp. mesquite-flavored liquid smoke

Instructions

  1. Preheat your barbecue grill to a high temperature.
  2. Remove stems from the tomatoes and rub olive oil over each tomato and jalapenos.
  3. Place the tomatoes and jalapenos on the hot grill.
  4. Turn the tomatoes and jalapenos after 10 minutes.
  5. Remove the peppers from the grill when their skins are mostly black.
  6. Remove the tomatoes from the grill when their skins are partially black and beginning to come off.
  7. Put the grilled tomatoes and peppers on a plate to cool.
  8. When cool, remove most of the skin from the tomatoes and place them into a food processor or blender.
  9. Pinch the stem end from each of the peppers and add them to the food processor or blender.
  10. Add the remaining ingredients and puree on high speed until smooth.
  11. Transfer the salsa to a covered container and chill for several hours or overnight to develop flavors.
  12. Enjoy!
