Ingredients

  • 2 1/4 cups water
  • 3/4 cup dried black beans
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon white wine vinegar
  • 1 teaspoon lemon peel
  • 1/4 teaspoon red pepper sauce
  • 2 green onions with tops
  • 1 cup green bell pepper

Instructions

  1. Heat water and beans to boiling in a 2-quart saucepan.
  2. Boil uncovered for 2 minutes, then reduce heat to simmer.
  3. Cover and simmer about 1 hour, stirring occasionally, until beans are tender.
  4. Drain the cooked beans.
  5. Stir in chopped parsley, white wine vinegar, lemon peel, red pepper sauce, sliced green onions, and chopped green bell pepper.
  6. Cook and stir until mixture is hot.
  7. Serve immediately or chilled.
