Ingredients

  • 3 skinless chicken breasts
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbsp. butter
  • 1/2 c. apricot marmalade
  • 1 tsp. lemon juice
  • 1 tsp. cornstarch
  • 1/2 tsp. dry mustard
  • 1 can mandarin oranges
  • green grapes, cut in half

Instructions

  1. Cut chicken breasts into pieces and cook on low heat for 4 to 5 minutes with salt and pepper in butter.
  2. Add marmalade, grapes, and mandarin oranges to the chicken.
  3. Mix lemon juice, cornstarch, and dry mustard until smooth.
  4. Add the mixture to the chicken and fruit, cover, and simmer for about 10 minutes.
  5. Serve over rice.
